Alishan high mountain tea is often called "Taiwan high mountain tea". The tea produced is characterized by partially fermented tea (hemispherical Baozhong tea or commonly known as oolong tea). Because of the cold and cold mountain climate, clouds and mists cover morning and evening, and the average sunshine is short. Tea plant buds and leaves contain less bitter components such as catechins, while the content of components that contribute to sweetness such as theanine and soluble nitrogen increases. The buds and leaves are soft, the leaf flesh is thick, and the pectin content is high. Therefore, the color of Alishan Alpine Tea Emerald green and fresh, mellow taste, strong throat rhyme, elegant and long-lasting aroma, water color, honey green and yellow, and resistance to brewing.
